Mango Smoothie

I love Altaulfo mangoes.  So.  Much.  I find that they are incredibly reliable compared to other types of mangoes and almost always are creamy, smooth, and unbelievably tasty.  Yes, I like mangoes.  A lot.  I like fruit, a lot.

We picked up yet another case of these beauties at the Calgary Farmer’s Market this weekend and will think about freezing some for winter, but will likely gobble them all up.  Can you blame us?

Ataulfo Mango Smoothie

Servings: 2-3 servings
Time: 5 mins
Difficulty: easy
Pure mango goodness.  Kid-approved.  Leftovers make refreshing popsicles.

  • 2 Ataulfo mangoes
  • 4-6 Medjool dates
  • 1/2 c plain full fat yogourt
  • 1 tbsp chia seeds
  • 1/2 tsp. vanilla extract
  • 1 1/2 c water
  • 4-6 ice cubes
  1. Blend everything together!

I have this high-speed Vitamix blender and it has a built in “smoothie” function, which allows me to throw in all the ingredients, secure the lid, press the on tab and walk away from the noise.  Speeds start slowly, then build to higher ones, reaching smoothie perfection.  It works like a charm.  If you don’t this feature, I’m sure that you are more than capable of replicating this function!  If you don’t have a high speed blender, I recommend soaking your dates in the water beforehand, for about 15 minutes, and don’t expect them, the ice cubes, nor the chia seeds to become fully incorporated/pulverized.

    1. Excellent! I am really in to cardamom right now, maybe because I have a fresh jar from Silk Road… So so good.
